This sounds like both nerves and mental fatigue were affecting you. It's important when preparing for next time to make sure that you're prepared for the mental stamina needed and to make sure that you don't burn yourself out in the few days before the test. Think about athletes - you want to be very rested before the championship match.

Once you're down to 2, compare them once more, then pick and move on. Agonizing back and forth doesn't actually increase the odds that you'll get it right - all it does is waste time and tire you out.
Agree that 8 minutes is almost nothing, especially because you have to sign in and out of the room. DO take the break though - if nothing else, getting up and walking around for 4-5 minutes will help revive your energy. And you should have something to eat and drink even if you don't feel the need - your brain needs the calories.
If you really want hot coffee, buy an insulated thermos. Otherwise, bring something else to eat and drink.
