Just enrolled in a class and going through the material and syllabus.

As a part of the homeworks through 9 weeks, Do we solve all the problems in the OG/Verbal and Math review? (or) Does the strategy guides cherry pick some questions to offer examples on those testing concepts?

The strategy guides cover all 1400 questions in OG11 and the math and verbal supplements. I recommend NOT doing them all during the 9 week course, however. Save some for review after the course is over.
