In chapter 13, of SC stretegy guide.(page 249),

It says
Wrong: I have never seen an aardvark, but last year my father did.
Right: I have never seen an aardvark, but last year my father saw one.


IF i modify the first sentence as
I have never seen an aardvark, but last year my father did see.


Will this be correct?.

In short , is the abscence of "did see" in the first sentence making it wrong?.

In short, no. It’s the absence of an object that is the problem here; that’s why your version is wrong for the same reason..
